Top 3 No-Bake Desserts for Kids!

Desserts are fun to eat, but as busy parents know – not always fun to prepare. Extravagant cakes and mouthwatering desserts, can take hours to prepare and often require long lists of hard-to-find ingredients. That’s why we’re giving you our top 3 no-bake desserts your kids will love. That’s right, these desserts require no baking and are SUPER easy to make! In fact, they’re so easy your kids can even make them with you (or by themselves while you’re nearby in the kitchen!).

1) S'mores Ice Cream Sandwiches

Ingredients: 8 graham crackers, broken in half 1/2 cup jarred marshmallow spread, such as Marshmallow Fluff 1 1/2 ounces bittersweet chocolate, finely chopped 1 pint rocky road ice cream, softened

Instructions: Spread 8 graham cracker halves with marshmallow spread and set aside. Put chocolate in microwave-safe bowl and microwave on high for about 90 seconds, stirring every 30 seconds, until melted and smooth. With an offset spatula or knife, spread melted chocolate on remaining 8 graham cracker halves. Let cool slightly. Spoon 1/4 cup rocky road ice cream onto each marshmallow-topped cracker. Top with chocolate-covered graham, chocolate side down, pressing gently. Serve immediately, or wrap in plastic and return to freezer. Sandwiches will keep, frozen, for 2 days.

2) Cool & Creamy Oreo Parfaits

Ingredients: 1 regular size package Oreo Cookies, crushed into crumbs 3 cups whole milk 2 small boxes instant vanilla pudding 12 oz Cool Whip, thawed 1/4 cup (1/2 stick) salted butter, softened to room temperature 8 oz cream cheese, softened to room temperature 1 teaspoon vanilla extract 1 cup powdered sugar Instructions: In a large bowl, whisk together milk and pudding mixes until thick. Refrigerate for about 30 minutes, until firm. Fold in Cool Whip and refrigerate while preparing the rest of the mixture. IN the bowl of your mixer, beat butter, cream cheese and vanilla on medium speed until smooth. Slowly add powdered sugar and beat on medium speed for one minute, until smooth. Fold cream cheese mixture into pudding mixture with a rubber spatula until combined. Spread cookie crumbs in bottom of dish. Layer pudding mix and cookie crumbs. Notes: Fills roughly 12 1/2 pint jars or a very large bowl/trifle dish.

3) Individual Banana Puddings

Ingredients: 1/3 cup sugar 1 tablespoon cornstarch 1/8 teaspoon salt 1 1/2 cups half-and-half 2 large egg yolks 1 tablespoon unsalted butter 2 teaspoons vanilla extract 4 medium bananas 24 Nilla wafers, broken Additional bananas and Nilla wafers, optional

Instructions: 1. Whisk sugar, cornstarch and salt together in a medium saucepan. Gradually whisk in half-and-half, then yolks. Place over medium heat and cook, whisking constantly, until pudding thickens and begins to boil, 3 to 5 minutes. Remove from heat, add butter and vanilla and whisk until butter has melted. Transfer to a 2-cup measuring cup that has a pouring spout. 2. Slice bananas and place a few on bottom of 6 4-oz. ramekins or custard cups. Divide 1/3 of pudding among cups, spreading over banana slices. Top each cup with 2 coarsely broken Nilla wafers. Repeat layers twice, ending with pudding. Cover each dish, pressing plastic directly onto pudding. Chill for at least 2 hours. 3. Just before serving, top with additional banana slices and sprinkle with Nilla wafer crumbs, if desired.
